We are running two ARUBA 6000 series controllers in Master/Local config. They are at 6.1.3.0.
What would be the "bads" of changing the the VLAN POOL assignment from "hash" to "even"? Certainly, most clients will get a different IP address? We are using an enterprise Windows Server for DHCP address assignment. So I can guess that attention will need to be given the dhcp server scope leases.

You will be changing one algorithm for another. Even seeks to evenly put users in VLANs, but if you already have scopes with leases accounted for, this might turn out to be much less even than you anticipated.
