Can I have a mix of 205s, 215s, and 225s in the same instant cluster? Is there any reason why I wouldn't want to do this?

But keep in mind that in order for these join a cluster they need to be on the same version of code.
If you have all these in the same area keep in mind that in a roaming event you will see different throughput behavior since the AP205s supports 2x2 and the AP215/225s support 3x3.

So I have an existing 225 cluster and just recieved some 205's. If I plug the AP's in will they update with the code that is running on the 225?
