I am migrating from CP-VA-500 virtual appliances to the 5k version (initial CPPM instance was built with a CP-VA-500 .ova instead of the 5k version). Requirements for the 5k version of 6.5 calls for 8 virtual CPU's. Is that 8 virtual sockets with a single core per socket? Or 2 cores per socket?

In short, a core is a CPU so 8 vCPUs = 8 Cores. Remember that 1 vCPU maps onto a physical core not a physical CPU.
