How do I know my AP groups/AP's are utilizing full N?

Try "show ap active" to see the APs.  Try "show ap bss-table" to see each individual AP and whether the SSID is broadcasting 802.11n" (HT).

so based on the AP type/model, it will fully utilize N or is there a setting somewhere on the controller to tell it to use N?

If you create a WLAN with the Wizard, it will ask you.  By default, if you upgrade and install 802.11n APs into your environment, it will be on.

FYI - 802.11n will ONLY work with SSIDs that are "Open" or have "AES"

    I am assuming the a-HT means N?

    Yes. HT = n.
