We have a 3600 Mobility controller in one building and we like to extend ethernet access to this building from our building across the street. We're thinking of purchasing two AP175 and building a point-to-point link between the two buildings. My question is the following: can I hang some AP125 off of the same vlan when the AP175 will be connected on the other building to service WLAN clients?

Yes, you can send backhaul traffic for other WAPs at the remote location over the point to point link. The admin guide details how to do this. Just need to pass the proper VLAN across the link.

You have a less expensive option.
Certainly AP175 will do the job for you, but by the time you add antennas, cables, and installation labor it's a lot to pay for two nodes.
Also, AP175 has two radios and there's no need to pay extra if you just want a single radio for bridging.
We sell a PtP bridging solution called the MST200 that runs our AirMesh operating system. The MST200s are self contained including a 14dBi antenna, and require no external hardware. Install is a snap, and AirMesh provides transparent IP connectivity for the ArubaOS APs on the other side.
Model is MST2HP-US. List price is $1,595. Your local Aruba rep can work with you to order. AP175 lists for $700 more before antennas.
