We currently have bc/mc optimization set on the controller uplink vlan and "drop bc/mc" on the SSID due to multicast issues from a couple years ago. We have a need to use apple tv's, air print, other apps etc.. and are wondering how to permit multicast traffic safely? Do we enable "drop bc/mc" and use bc/mc opt on all vlans? Do we add IGMP snooping on the controller, switch, or both? Any help would be much appreciated.

If you are on 6.3, you can enable airgroup and still drop the multicast traffic.
The controller will keep track of the devices allowing you to discover them. Think of it as a bonjour proxy.
