Should I upgrade to 8.0 with a traditional Master/standby setup?

I'm reviewing the documentation now, and it seems to be focused primarily on using a VM as your master controller now.  All other controllers are considered lower on the totem pole.

Is it possible to have two 7205 controllers running 8.0 just for improved functionality and fewer bugs?

You're better off sticking with the 6.5.x train for the time being.
Definitely schedule some time with your Aruba/Partner SE as well to discuss
    future plans / new topologies.

While I appreciate your optimism (heh), it might be best to stick with 6.5.x that is GA if code stability is your ultimate goal. 8.0.1 will support controllers without a Mobility Master, but it is a new GUI, new workflow, noew CLI, etc, so the learning curve might be a bit steep and early adopters may have to struggle to get over the newness.

But like Tim said, DO engage with your local SE and engage with them and the community as 8.0.1 releases and more collateral and documentation comes out. Thanks!
