Yes, everything you mentioned is correct but there is no chance to set a gateway.
I haven't found an command to set an gateway on this switch.
every information I found in the internet tells me the same, "this is a Layer 2 Switch and you can't set a gateway".
If you can send me the commands to set it up I would be thankful.
The switch os is ArubaOs-Cx PL.10.12.0006

I don't understand the desire of changing the default VLAN (VLAN id 1) when, simply, you should just create the corresponding VLAN id 31, assign that VLAN id an IP address (conveniently matching the associated subnet you're using in your internal network to manage your switches), define the default gateway (it should be an IP address within your segment dedicated to managment, the SVI of VLAN id 31) AND connect the Aruba 6100 to the rest of your network using an uplink port tagged or untagged on that VLAN id 31 (tagged/untagged depends on how you transported the VLAN 31 across your switches, tagged or untagged?). Doing so the "issue about VLAN 1" should vanish.

I have a question about the Aruba 6100 28port switch.
I can't reach it via SSH or WEB-Gui out of our defined Management VLAN 31.
I read in the forum that it isn't makeable to change the default VLAN (VLAN 1) to another VLAN.
My need is to change the default VLAN that I can reach my two new switches out of our Management Network.
So is there a chance to change it or must I buy me a other switch?
