I don't see a limitation, just about free flash space. If you have at least the amount of space free as referenced for 8.3, I would expect that a direct upgrade works; but 8.3 as intermediate would not hurt. Make (flash) backups and other precautions you would do for any upgrade. If unsure, get TAC involved.

Following the book, you would keep the Mobility Conductor (MCR) within 3 versions from the MD. I probably would do 8.1 -> 8.3 -> 8.6 -> 8.10 -> 8.11 to be safe, but if you have time and can take a risk, you could upgrade 8.1 -> 8.11 directly to save time, especially if you just have controllers and not MCR. If this is a critical deployment, you could ask TAC to have a look at your upgrade plan, and possibly to be standby when you perform the upgrade.
In general, I've not really seen many upgrade issues with AOS, but the bigger steps you make, the fewer people have done it before.
