Any plans to have L3 VTEP feature available in the near future? Currently we need to lab EVPN/VXLAN with Arista vEOS :)

Yes, this is the objective to prioritize such missing features. There is pending work on such items (UBT is an other one)
that still requires time to get them ready.

The newest image that's available in the software downloads is 10.6.0110, but there are other discussions indicating an image for 10.7 (which I cannot find). 

Regarding the current image, it appears that STP is not behaving appropriately in GNS3.

GNS3 rel 2.2.19 running on a ProLiant DL385p Gen8 host; 10 vCPUs and 18 GB of Memory resources were assigned (and reserved)
All switches are provisioned at recommended resources.
