Hi Antony,
Do you have CLI access on the switch?
If so, enable debug mode with the commands below:
debug destination session
debug event
Also check the PoE status on the interfaces:
show power-over-ethernet brief
Share the result with us.

Just for comparison, I did the voip at my last job. All Netgear switches, and my voip provider was Comcast.
I did not had adjust any PoE on the Netgear switches, and that's what I'm doing with the Aruba switches.
My current voip provider said it could be because the phones are not using TLS, but they switched us over to TLS, then rebooted phones but still having issue.

When I look at the PoE switch port, I don't see any errors. I noticed there's an option for 'Power Priority', what does this do? Its set to default 'low' now.

We recently switched to VoIP phones, and some phones are connected to PoE ports. The phones are VVX350/450 phones, and they use about 5 volts, and that's what I'm showing on the PoE port. But some phones restarts sometimes, so I'm trying to figure its a PoE issue or something on the phone carrier side.
