Currently have 2 DNS servers listed for the built in virtual controller DHCP server. I would like to remove these so the guest SSID's use the internal DNS server configured on the AP's. If i remove these and click apply...does anything restart? AP's, VC, etc? Or is it seemless and applies on the fly without any sort of resets?

DHCP only comes into play on initial connections and after an address is acquired, any changes to the DHCP shouldn't affect existing users. That being said, I would still do this after hours to be safe, as you don't know how clients may react, but I would say I'm 95% confident it would not affect anybody users already on.

No any changes in the DNS or DHCP doesn't require a reboot.
