In a secure deployment should i have controllers in the DMZ for guest access? Or can they go on the corp network? Any pointer to docs would be good.

That's completely your decision when designing a network. No docs will give you that answer.

But is their a best practice or recomendations? I know in the Cisco world it is advised to use Anchor controllers in the DMZ but i cant really find any recomendations or documents that confirms/recomends either way when it comes to Aruba/Clearpass

No. Design should follow your security requirements.
