    I've been tasked into seeing if Clearpass/Mobility Controller can support doing one SSID for our Guest (open/portal), PSK (for chromecasts), and Corp (EAP-TLS) networks. Is this possible? If so, how would I go about this as far as the authenication types and services on the controller as well as CPPM?

    No. SSIDs are broken down by encryption type.

    In your case, you would need 3 (open, PSK and 802.1X)

    I’d recommend you actually just connect your headless devices (chromecasts, etc) to the guest SSID and leverage the Device Registration portal in ClearPass to register them.
