Page 567 of the 8.3.0.0 of the user guide mentions the channel field - same with 8.4.0.0 UG page 651. Where did this field go?

Channel
Transmit channel for this radio. The available channels depend on the regulatory domain (country). This parameter includes the following channel number configuration options for 20 MHz, 40 MHz and 80 MHz modes:
n 20: Select this option to disable 40 MHz mode and 80 Mhz mode and activate 20 MHz mode for the entered channel.
n 40: Entering a channel number and selecting the 40 radio button in the WebUI selects a primary and secondary channel for 40 MHz mode. When you use this option, the number entered becomes the primary channel and the secondary channel is determined by increasing the primary channel number by 4. For example, if you entered 157 into the Channel field and selected the above option, radios using that profile would select 157 as the primary channel and 161 as the secondary channel.
n 80; Entering a channel number and selecting the 80 Mhz radio button selects a
primary and secondary channel for 80 MHz mode.
If you select the spectrum monitoring checkbox on this profile page, the AP will operate as a hybrid AP and scan the selected channel for spectrum analysis data.

If you are running an MM, you do not see those parameters in the ARM profile.  They are configured in the Radio Profile.  If you are NOT running an MM, they are in the ARM profile, as stated.

We are running MM.

However, we have one 2.4 radio receiving interference on channel 1 - only one AP in this area. Should MM change the channel (which I think might take 24-hrs to adapt) or should I change Non-WiFi-Interference Immunity? I believe Bluetooth is the problem.

If you are running an MM, you have Airmatch, which only considers changing channels once per day at 5am.  The access point will change channels in the presence of severe interference, however.

What is the Rf utilization of that access point on that 2.4ghz channel?

To be clear, Interference Immunity would be for severe interference, BUT that access point would typically change channels before Interference Immunity would be needed.  I have only seen two times in 8 years that Interference Immunity needed to be used, and it was very extreme.  Bluetooth does have some interference, but unless it is like 30 bluetooth devices, I would look at the RF utilization before doing anything.  

You could, across the board, lower the transmit power of the 2.4ghz radios, because they definitely propagate further than the 5ghz band.

Bluetooth in itself is not very high utilization.  If the Utilization on the AP in question is not over say 40% sustained, there is nothing to do.  If you make sure the 2.4ghz radio is lower than the 5ghz radio, more devices will prefer the 5ghz and 2.4 will die a proper death in the future.

The AP is still using channel 1.

That output is considered high utilization but not severe interference.  Access points do not change channels frequently with Airmatch.  Airmatch changes channels once per day based on channel data gathered throughout the day.

Additionally, you should type "show ap arm state ap-name <name of ap>" to see how that access point sees other access points.  If it sees alot of neighbor access points on the 2.4ghz band, you should turn down the maximum transmit power on the 2.4ghz radio.
