How do I use both interfaces for higher bandwidth / redundancy on IAP 325. We yet to receive controller 7010.

I would like IAP 325 to use both ethernet ports.

You need to configure LACP on the switch.

If already not enabled, you can use below document to enable LACP on the IAP:

Do I need to connect both ports on PoE or only one would be fine on IAP?

One should be fine. Instead of POE, consider using POE+ else your AP will work in restricted mode.

We are using injectors from Aruba only. adapter says 55V, 0.6A.

    I believe its PoE+ only..

Good. No restrictions with that injector.
