can I rename a wireless AP without having to reboot it remotely

Unfortunately no. It's part of the provisioning process.

that's too bad I have always understood that but working in a hospital this means it's after hours for me :)

I work in a hospital too. I know the pain of rebooting APs and doing AOS updates. Do you have enough coverage in the the area to compensate for the AP? I have renamed an AP and rebooted during the middle of the day, becuase the other APs in the area compensated for it. I could not rename multiple APs in the same area at once, but I have gotten away with one at a time.
