    Hi,
I was wondering if there is a way to schedule a switch port to auto turn on and off on my S2500 POE switch.
Any advice would be greatly appreciated.
    Thanks,
    Pedro

Not that I'm aware in the switch itself. Your management platform may provide such a feature.

Note that the S2500 Mobility Access Switches are end-of-support and for critical production it may be good to move to a still-supported product.

There certainly is using a time-range profile.  This is what I have on my S1500 switch.

Define a time-range-profile and assign it to your poe-profile.

    #show time-range-profile bedtime

    PoE time-range "bedtime" (N/A)
    ------------------------------
    Parameter Value
    --------- -----
    Time range mode periodic
    Absolute time-range N/A
    Periodic time-range Daily 05:00 Daily 23:59

    # show interface-profile poe-profile bedtime

Power over Ethernet profile "bedtime" (N/A)
    -------------------------------------------
    Parameter Value
    --------- -----
    Enable PoE interface Enabled
Max Power on PoE port milliwatts 30000
    PoE port priority low
    time-range-profile bedtime

As you can probably gather, this turns on the Poe at 0500 and turns it off at 23:59.
