Is it time to pull the trigger and allow for 40mhz channels in a stand alone building with only 5 Aps? Wondering what ya'll would do? We only allow for 20Mhz channels widths now.

It depends on your objective(s).  More speed?  Some clients are not more efficient at 40mhz and it ends up wasted or your resources do not require 40mhz channels to perform adequately.

If your clients support DFS channels, you should have "pulled the trigger" a long time ago.  If they don't, with 5aps you could still have an overlapping channel (or interference from neighbors) which could decrease performance.

    Go straight to 80. Even 160 in a WI-FI 6 or 6E environment,

    with a 5 Ap'a scattered around environment.

A user should first evaluate what channels and channel width their clients support first.  Not knowing could expose them to serious performance issues.
