Could some please clarify if it the CX-6300M-24port-SFP+ (JL658A) can be stacked at 50Gb via multimode fiber using the R0M48A SFP56 transceiver? Looking to spread my stack across a couple of racks in my data center.

The only SFP56 interconnects listed in the transceiver guide are R0M46A and R0M47A, both DACs.  The information on the module itself only lists various flavors of 8360 as compatible, and only the 8360 datasheet references R0M48A.  Outside of waiting for the 12th edition of the transceiver guide to come out with (hopefully) more insight, I expect you will need to contact TAC to confirm compatibility (or not).

Hi, if I were you I would check the latest Aruba CX 6300 Switch Series QuickSpecs available (as of now, I'm referring to the June 2022 edition):

The R0M48A is supported and, I add, also a double check against latest AOS-CX release notes (especially for ArubaOS-CX 10.09 and/or 10.10) would be a good idea to look for (new options) supportability.
