I can see the management frames and radio.tap info but I can't see DHCp request packet etc. like you would on a wired trace. Is there something I need to setup in wireshark to do this?

You would need to do a capture at the controller after decryption to see this.

If the client is connecting used a PSK then you can enter the key and SSID into wireshark. If you can then capture the initial exchange of the client connecting to the wireless you will be able to see the decrypted traffic.
