Both the AP-3xx series and Ap-5xx series are current models, there is no end-of-sales or end-of-support date announced. The only different is that the AP-3xx series is an Wi-Fi 5 (or 802.11ac wave2) and the AP-5xx series are the Wi-Fi 6 (or 802.11ax) standard.
List price for AP-3xx series and equal AP-5xx series are close together, so for greenfield i would use the AP-5xx series. The most benefits from Wi-Fi 6 are reached when all clients us the new standard and that need some time.
Your current AP-315 AP's are still awesome and are used by a lot of customers.

One additional note that at this moment;
- Aruba 8.5.x.x is the latest conservative release.
- Aruba 8.6.x.x and 8.7.x.x are standard releases.
Personaly i would recomend the latest 8.5.0.11 release for best reliability util there is a requirement for later on features in the newer releases.
