You need to press Esc+Ctrl+k simultaneously in order to gain access to all commands.
There is no Aruba documentation about the available commands. But there is documentation about most of the Linux commands on the internet.
It is not recommended to use anything beyond the most basic diagnostic tools without instructions from TAC.

No, there is no way to change the default user.
Please keep in mind that console and SSH access directly to the CAP is not necessary on a regular basis.
Since the AP has a management tunnel with the controller, you can obtain various information and statistics about the AP using various "show ap" commands on the CLI of the controller.
Direct console or SSH access could be only useful in some specific troubleshooting scenarios and the actions there should be coordinated with TAC.

For access to the AP via SSH the user name is root and the password will be the same as the console password specified in the AP system profile. This is also where you can disable SSH to the AP if needed.
The modify the AP system profile for a particular AP group, go to Configuration ->AP Groups, select the desired AP group. On the right side you will see the tab "profiles", click on it and expand the profile tree to see the AP system profile. AP Console Password is in the "Advanced" Section.
Please keep in mind that default profiles should not be changed. If you modify the Console Password you should save the changes under a new meaningful profile name.
