My setup runs without issues with two virtual switches. Can push configuration like time settings from NetEdit and are commit successfull.

Subject: Aruba CX switches and EVE-NG simulator - minimum CPU model requirement
Far a i known EVE-NG or CX Simulator don't have any CPU requirement other than is have to support Intel Virtualalization.

https://www.arubanetworks.com/techdocs/AOS-CX/10.13/OVA/rn_ova_10.13.0005.pdf
Note: 10.13.xxxx is available since this week ;)
I run EVE-NG on a Intel NUC Gen7 with Corei7 4core / 32b ram / NVMe / VMware 6.7. Can run up to 6-8 virtual switches. Didn't test it with NedEdit unfortunally.
I don't think your hardware is the issue.

Subject: Aruba CX switches and EVE-NG simulator - minimum CPU model requirement
Hi,
does CX virtual switches / EVE-NG simulator have some sort of CPU instruction requirement to be able to work?
I have the problem where it runs on top of E5-2680 v2 CPU's in ESXi 7.0.
The CX switches boot up and can be managed in CLI without problems.
But there is a weird thing going on when I try to use NetEdit v2.9 to make changes to these switches.
All CX switches go to hardware reset and start rebooting every time I click deploy button in NetEdit.
My NetEdit is running as a separate ESXi VM.
So I started to wonder maybe my CPU is too old and does not have some instructions required by CX virtual switches or EVE-NG?
What could be the cause of the problem? I have 20 CPU cores, 40 threads and 196GB RAM.
EVE-NG has 20 cores and 64GB RAM which should be more than enough to run 3 CX switches for a lab - so the problem is not hardware resource related.
