Hello Maxime, technically speaking you should be able to upgrade from KB.16.06 to KB.16.11 (and from WC.16.08 to WC.16.11) without using any particular interim software release, just be prepared to - according to Release Notes (if that is reported) - see the BootROM automatically updated too (with auto-reboot of the Switch), this will imply your switch could perform two consecutive power cycles (so be calm, no warning).
As usual try to perform those "jumps" being connected through Serial Console so you will be able to grab all the messages during the booting phase(es) and read relevant Release Notes to understand if there will be issues with particular configuration statements even if this could be an issue more during the downgrading procedure than during the upgrade one (do not forget to backup you running configuration and keep it in a safe place before starting).
Keep trace of your starting software version (show versions, show flash) so you have a "starting point" to inform about the Aruba TAC in case of issues.
The above is valid for upgrading (or updating) standalone switches, in case of stacks things are little bit different.
