We've been running the cppm backup VM for a long time which automagically keeps 4 days worth of configs from each of our clearpass clusters.

This has worked well ... except now the size of our backup files are causing the VM to run out ofndisk space.

The problem is that nowhere can I find any doc on how to change the number of backup copies stored.

Is there a way of just keeping 2 days worth for example ? We save config and session data

I haven't seen such a setting. You can backup just configuration which will reduce the amount of data backed up.

Please work with TAC to find out why your backups are that large and/or fill up your disk space. It could be that your publisher is under-provisioned for the size of your deployment.
