A new hotel is planning on deploying IoT controls in rooms, mainly sensors for motion, doors, lighting...

The IoT equipment utilize their own proprietary protocol called CoSS.

As I know that the new Aruba APs will come with an integrated Zigbee radio for IoT controls but since a different protocol is utilized here, won't the wireless network be able integrate with the IoT network?

While there's more than one four-letter-acronym "CoSS" it looks like it's probably a data-layer protocol and the transport will likely be something else.

Start with the IoT vendor to get what transport they're using then go back to your Aruba support team to see how you might integrate it.
